Louisiana oyster patty with flaky puff pastry, shiitake mushroom and chervil

Breaded Gulf Snapper with Crab
Snapper filets brushed with crab-fat-butter, wrapped in breading, served with Béarnaise sauce and spinach

Beef Tournedos
Beef tournedos served with pomme truffade, braised leek, smoked bone marrow and black truffle bordelaise sauce
